Smoked Salmon Salmon Pasta Toss
Smoked Salmon salmon tossed with a light cream sauce over farfalle

My family sent me some delicious smoked salmon from the Kasilof Seafood  Company while on a recent trip to Alaska. Here is what I made the day that I opened the package.

Smoked Salmon Salmon and Edamame Pasta
(For 2-3 people)

1 cup of shelled and steamed edamame
1/2-3/4 cup halved cherry tomatoes
2-3 chives, cut into small pieces

Banana Peanut Butter Smoothie
A delicious smoothie to power your commute and avoid the morning munchies.

In grad school in Raleigh, NC I tried to bike to campus whenever possible. It was roughly five miles away, but almost all uphill. I found that this tasty morning smoothie gave me the energy I needed to get there and kept me full until lunch time. The measurements are not exact, its all about finding the right balance of ingredients for you!

1 banana
2-4 T of peanut butter
squeeze of honey or agave nectar
few sprinkles of cinnamon
3/4 cup plain or vanilla yogurt<…

cherry quinoa salad

cherry quinoa salad
on of my favorite summer recipes from vegetarian times.

it is rare that i will post a recipe verbatim from the source, but this one is so good that i feel i should. however, i did alter it for a bbq this week to make it vegan by leaving the yogurt out. it was still delicious! also, i recommend steaming the cherries if you use dried. this will help bring some of the flavor into the salad that only fresh cherries can offer.

BBQ Seitan Wraps and Okra Corn Hash

BBQ Seitan Wraps and Okra Corn Hash
A vegan alternative to southern favorites—okra and BBQ

The other evening I made another Southern inspired dish with some California touches. I didn't use a recipe per sey, so what follows will be a list of what was included and a summary of what I did. As always with "inspired" cooking versus cooking from directions, adjust to taste!

BBQ Seitan Wraps

1 T olive oil
1 small red onion, sliced
3 small red, green and yellow peppers, cut into strips
1 pkg traditional flavored seitan, sliced into sm…

Beet & Armenian Cucumber Salad: A Lunch Delight

By kelly_c, Posted to Kat's Kitchen  Aug 20 2008
a quick and easy toss together with a tasty almond crunch

I was rummaging in the refrigerator for lunch time salad ingredients and pulled out one of my staples, beets. I had half a can left from a previous recipe that had to be used soon. A friend gave me an Armenian cucumber (which I had not tried) and so I pulled that out. I washed, seeded and chopped about 1/3 of the cucumber, drained the beets and got out the feta. I combined the three ingredients in a bowl with some black pepper and tasted it. It was still missing something. I bought slivered t…

Chana Dal and Eggplant Curry

Chana Dal and Eggplant Curry
an Indian inspired dish that is a hearty weeknight meal

This meal was exactly what I was hungry for after a bike ride to midtown for a great hatha flow class with Tamara at Deep. What better to follow an inspired class with Indian chants than a curry and garam masala spiced dinner! I did have to plan ahead though, the dal takes some time to cook. The measurements are approximate, please correct as you see fit.

I started with the dal.

Chana Dal

4 1/2 cups of water
1 1/2 cups of chana dal, washed and drained (baby…

Green Beans in Black Bean Garlic Sauce over Rice

Green Beans in Black Bean Garlic Sauce over Rice
a simple, quick meal that's easy on the wallet serves up late summer flavor

Its a little late for green beans, but there are still some good ones out there if you look at the market this Sunday. The beans should be a good green color, crisp and not wrinkled, nor too large around the middle. I picked about two-thirds of a pound in my neighbor's wonderful garden and tossed together my variation of a dish I found in a Vegetarian Times:

Green Beans in Black Bean Garlic Sauce over Rice

2/3–1 lb of green beans, washed, ends trimmed and cut into…

Cucumber and Tomato salad for an afternoon snack
Got the 3:00 hungries? Try packing this salad for work to snack on instead of heading to the chip machine.

Well its August here in Sacramento and cucmbers and tomatoes are in full season. This afternoon I put together a batch of one of my summertime favorites instead of snacking on crackers or chips. There are endless variations on this recipe, experiment with what you have in your kitchen!

Cucumber Tomato Salad

1 cucumber, seeded and diced
1 c cherry tomatoes, halved
2 tsp balsamic
1 T olive oil
1/2 tsp kosher or sea salt
fresh cracked black pepper…

Mock Apple Pie

Mock Apple Pie
A 1950s classic makes an appearance for Sunday with Madmen

In 1935 Ritz crackers came up with their own version of a recipe that was used in the late 19th century to make a faux apple pie when there was a shortage of apples. Mock Apple Pie features NO apples whatsoever, but tastes strangely like the American classic. I thought that I would resurrect the recipe to enjoy while watching our weekly episode of Madmen, an AMC show about the advertising industry in New York in the 1960s. This delicious dessert is labeled as feeding up to 10 but I found it i…

Southern style Sunday evening

Southern style Sunday evening
Cornbread and beans gets a California home grown twist

This evening I made a new dish of my own design. I took a box of Trader Joe's cornbread mix and topped it with a garden grown summer chili and paired it with steamed chard. It was a hit! I often cook without a recipe, with varying success. But this one warrants another go for certain.

Prepare cornbread according to directions and bake.

1 T oil
1 medium onion
1 small red pepper
1 small yellow pepper
1 small green pepper
2 tomatoes
1.5 c water…
